no bake energy bites
i'm sure this recipe has made the rounds on the blogosphere and pinterest, but i ran across it on my friend abby's blog and well, i had them for lunch yesterday. yum! our day was a bit strange and started with an er visit for graham as he awoke inconsolable and with severe neck pain. he would not even let us touch it. of course, i feared meningitis or something awful, but praise God it was just acute torticollis and with a dose of valium, he was able to relax the muscle and he is fine (though he was rather goofy on the drugs...should have gotten video). anyway, these are tasty and healthy.
No Bake Energy Bites
1 cup oatmeal
1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flaxseed
1/2 cup mini chocolate chips
1 tsp vanilla
Combine all ingredients in a bowl and chill in the refrigerator for 30 minutes. Once chilled, roll in to bite size balls. Store in an air tight container in the fridge for up to one week. {Just so you know they’ll be long before a week is out!}
